Online notarization for signers in Nebraska
A commissioned New Jersey notary can notarize for you by secure video while you're in Nebraska. Below: the Nebraska law on out-of-state notarizations, and who has the final word.
Will Nebraska accept a New Jersey online notarization? Generally, yes. Nebraska law recognizes notarial acts performed in other states (Neb. Rev. Stat. §64-201). The county register of deeds or whoever receives your document still decides what it accepts.
What Nebraska law says
Nebraska lets notarial acts be performed outside the state for use in Nebraska with the same effect as acts by a Nebraska notary, by officers listed in the statute. The rule dates from 1969 and doesn't mention technology. (Neb. Rev. Stat. §64-201)
On our side, New Jersey law treats an online notarization by a New Jersey notary as performed in New Jersey, wherever the signer is (N.J.S.A. 52:7-10.10).
Who decides in Nebraska
We didn't find an official Nebraska page that adds requirements for out-of-state or electronic notarizations. That isn't a promise there are none. The county register of deeds, agency, court or company receiving your document decides what it accepts, so ask them before you book.
Nebraska's own online notaries
Nebraska's Online Notary Public Act (Laws 2019, LB186) lets a Nebraska online notary act whether or not the principal is in Nebraska (§64-411). (source) That's context: it governs Nebraska notaries, not ours.

Questions

Section 64-201 doesn't address technology either way. Because it doesn't speak to online acts directly, check with the office receiving your document before you book.
Is a New Jersey online notarization valid in Nebraska?
Generally, yes. Nebraska law recognizes notarial acts performed in other states (Neb. Rev. Stat. §64-201). The county register of deeds or whoever receives your document still decides what it accepts. We are not lawyers, so for anything high-stakes, ask the receiving office or your attorney.
